Shrimp Scampi Bites
Everything you love about shrimp scampi in a tasty little bit! These shrimp scampi bites are so easy to make and such a crowd-pleaser appetizer.
Ingredients
- 1/4 cup olive oil, for brushing the bread
- 1 French baguette, cut into 1/2 inch thick circles
- 1 tablespoon butter
- 1/2 pound shrimp peeled, deveined and chopped
- 3 cloves of garlic, chopped
- 1/2 teaspoon red pepper flakes
- 1/4 cup white wine
- 1/4 cup lemon juice
- 4 ounces cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1/2 cup mozzarella cheese, shredded
- 1/3 cup parmesan cheese, grated, plus 1/4 cup more for topping
- 1 tablespoon fresh Italian parsley, chopped + more for garnish
- 2 tablespoons lemon zest, for topping
Method
- Preheat broiler on high.
- Brush the bread slices with olive oil and place onto the sheet pan. Bake until lightly toasted about 2 minutes, per side. Take out of the oven and, set aside.
- In a pan over medium-high heat melt butter and cook shrimp until pink, about 3 minutes per side. Set aside.
- Add the garlic and red pepper flakes to that same pan and cook until fragrant, about a minute or two.
- Add white wine and lemon juice, simmer and reduce by half.
- In a medium bowl mix the shrimp, white wine sauce, cream cheese, sour cream, mayonnaise, mozzarella cheese, 1/3 cup parmesan cheese, and parsley.
- Scoop about 2 tablespoons of the shrimp dip onto each sliced, toasted baguette and top with remaining 1/4 cup of parmesan cheese.
- Place under broiler for about 2 minutes or until cheese is melted and lightly browned. Remove from oven and top with fresh Italian parsley and serve.
