Ingredients
  • 1/4 cup olive oil, for brushing the bread
  • 1 French baguette, cut into 1/2 inch thick circles
  • 1 tablespoon butter
  • 1/2 pound shrimp peeled, deveined and chopped
  • 3 cloves of garlic, chopped
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup white wine
  • 1/4 cup lemon juice
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup mozzarella cheese, shredded
  • 1/3 cup parmesan cheese, grated, plus 1/4 cup more for topping
  • 1 tablespoon fresh Italian parsley, chopped + more for garnish
  • 2 tablespoons lemon zest, for topping
Method
  1. Preheat broiler on high.
  2. Brush the bread slices with olive oil and place onto the sheet pan. Bake until lightly toasted about 2 minutes, per side. Take out of the oven and, set aside.
  3. In a pan over medium-high heat melt butter and cook shrimp until pink, about 3 minutes per side. Set aside.
  4. Add the garlic and red pepper flakes to that same pan and cook until fragrant, about a minute or two.
  5. Add white wine and lemon juice, simmer and reduce by half.
  6. In a medium bowl mix the shrimp, white wine sauce, cream cheese, sour cream, mayonnaise, mozzarella cheese, 1/3 cup parmesan cheese, and parsley.
  7. Scoop about 2 tablespoons of the shrimp dip onto each sliced, toasted baguette and top with remaining 1/4 cup of parmesan cheese.
  8. Place under broiler for about 2 minutes or until cheese is melted and lightly browned. Remove from oven and top with fresh Italian parsley and serve.
