Shrimp Scampi Bites

Everything you love about shrimp scampi in a tasty little bite! Easy to make and a crowd-pleaser appetizer.
Ingredients
- •1/4 cup olive oil, for brushing the bread
- •1 French baguette, cut into 1/2 inch thick rounds
- •1 tablespoon butter
- •1/2 pound shrimp, peeled, deveined and chopped
- •3 cloves garlic, chopped
- •1/2 teaspoon red pepper flakes
- •1/4 cup white wine
- •1/4 cup lemon juice
- •4 ounces cream cheese, softened
- •1/4 cup sour cream
- •1/4 cup mayonnaise
- •1/2 cup mozzarella cheese, shredded
- •1/3 cup parmesan cheese, grated, plus 1/4 cup more for topping
- •1 tablespoon fresh Italian parsley, chopped, plus more for garnish
- •2 tablespoons lemon zest, for topping
Instructions
- 1Preheat broiler on high.
- 2Brush the bread slices with olive oil and place onto the sheet pan. Bake until lightly toasted, about 2 minutes per side. Take out of the oven and set aside.
- 3In a pan over medium-high heat melt butter and cook shrimp until pink, about 3 minutes per side. Set aside.
- 4Add the garlic and red pepper flakes to the same pan and cook until fragrant, about a minute or two.
- 5Add white wine and lemon juice; simmer and reduce by half.
- 6In a medium bowl mix the shrimp, white wine sauce, cream cheese, sour cream, mayonnaise, mozzarella cheese, 1/3 cup parmesan cheese, and parsley.
- 7Scoop about 2 tablespoons of the shrimp dip onto each toasted baguette slice and top with remaining 1/4 cup of parmesan cheese.
- 8Place under the broiler for about 2 minutes or until cheese is melted and lightly browned. Remove from oven, top with fresh Italian parsley, and serve.
