Ingredients
  • 3 ounces cream cheese
  • 2 1/2 mozzarella cheese, shredded
  • 2 eggs
  • 1 1/3 cup almond flour
  • 1 teaspoon baking powder
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Garlic Butter Sauce:
  • 1/3 cup butter, melted
  • 3 garlic cloves, minced
  • 1/4 cup Italian parsley, chopped
Method
  1. Preheat oven to 400 degrees.
  2. In a large bowl melt the mozzarella cheese and cream cheese in the microwave for 2 minutes, mix until smooth.
  3. Add the eggs into the melted cheese, almond flour, baking powder. Mix until smooth
  4. In a small bowl mix the parmesan cheese and Italian seasoning. Set aside
  5. Divide the dough into 8 balls and roll them in the parmesan cheese. Place in a greased cast-iron skillet.
  6. Sprinkle with more parmesan cheese and bake for 20-25 minutes or until golden brown.
  7. Brush the baked keto cheesy rolls with the garlic butter and serve!
